Back to Basics

I really need to get back to the basics of healthier eating. ( and i don't think my dinner of a Big Mac and fries really counts.... lol... but it sure was good!)
I had done really well and lost 15 pounds quickly, but really got off track with moving and vacation. It is really almost like I forgot how to balance my diet bank account and have it all, not just at once.
But as blogland is my witness, I am back to balancing my diet! I am going to re read my book naturally thin and start over basically. Luckily I haven't gained anything back, just stayed even, but I really need to try.
Done very well today.
Breakfast was a Green Monster smoothie. My mix: one cup milk, two handfuls spinach, 1/4 dry rolled oats, 1 1/2 frozen banana, 1 Tbs. peanut butter. So good! You really can't taste the spinach I promise..
Then lunch was a version of a Nicoise Salad which is referenced in this post. It wasn't the same exact recipe, but just thrown together from what I had on hand. So filling and refreshing.
Not going to have time to post tonight, but dinner is going to be spaghetti... just good old spaghetti...

I'm baaack!

Hello hello! It seems after moving and vacation I turned into the worst food blogger on the planet. (not that I was very good to begin with) But am making a better effort now.
You really haven't been missing out. Our food life has not been been very exciting lately. Other then some really good greek turkey burgers, boring boring food! Literally we had hamburger helper last night for dinner. (which tasted great by the way, it was just an easy out)
So breakfast this morning was coffee (always!) and a clif bar. I really like clif bars for breakfast. I had Peanut Toffee Buzz. I am not great about eating breakfast but I tend to get queasy by about 11 if I only have coffee, but man did that bar fill me up! I had a hard time finishing it. Plus Smith's (its a kroger store) had them on sale for a buck. Not the best price, but usually there they are 150 on sale so we stocked up since they are the only store that has the flavor we like.

The Big Breakfast Debate

I am horrible about eating breakfast! I don't like it really in the morning, and would much rather eat leftovers from dinner the night before, (but given the size of my family there usually aren't leftovers).
I am always searching for things I like that are quick (I do like eggs and stuff but am usually too lazy to cook them), and if I drink too much coffee on an empty stomach I start to get really queasy by about 11. I got some clif bars at the store the other day for when I'm on the run, but they are too expensive to grab and eat one every day.
What are all your guys' favorite breakfasts?
This morning I decided I was in the mood for some oatmeal. Tha base mix I found on Kath Eats Real Food. The recipe for Whipped Banana Oatmeal is really versatile and I have found a bunch of different toppings to try. This mornings oatmeal turned into maple almond. To the top I added and mixed in a small handful of chopped almonds and a spoonful of maple honey! Maple honey....mm..... I didn't even know there was such a thing. But the same day as the Central Park Burger debacle we went and visited a monestary in Huntsville, Utah and the Trappist Monks make and sell honey. We got regular, maple, and apricot. They are all yummy, but the maple is my favorite.
So yeah...my posting may be irregular over the next few weeks. We are moving in a couple of weeks and I am going to be super busy trying to get everything packed up and done... trying to figure out how to fit a 3000 sq foot house into a 1200 sq foot condo... not fun.

Kentucky Grilled Chicken?

Who has tried the Kentucky Grilled chicken? I have had it a few times now, and must say that I don't think I like it very much.....
If I am going to be graced by the Colonel's presence I think I would perfer it the good old fashioned fried way... of course that isn't conducive to healthy living, but isn't it all about moderation?
That being said my husband told me last night that to make the coleslaw they first bleach all the greens and the re dye them... really?... ew... that kind of ruined it for me.
